Spicy Coconut Vege. Lamb Gravy

Ingredients:

  •  VegeWorld Vege. Lamb.
  • Bird’s Eye Chilli 8-10 pieces
  • Turmeric – 1 inch
  • Tamarind Slices
  • Potatoes – 2
  • Lemongrass – 2 stalks
  • Turmeric Leaves – optional
  • Coconut Milk
  • Salt

Preparation:

  1. Cook the VegeWorld Vege. Lamb in an air fryer for 10-15 mins at 160°c. (Temperature may vary according to your air fryer setting).
  2. Meanwhile, pound the bird’s eye chili together with the turmeric.
  3. Add the ingredients into the frying pan. Add some water and cook at medium heat and let it simmer.
  4. Pound the lemongrass and cut the potatoes into cubes. Add the both ingredients into the pan.
  5. Stir it well and let it simmer. Pour in the coconut milk and add the tamarind slices into the pan with some salt to taste.
  6. Mix in the VegeWorld Vege. Lamb and stir well.
  7. Let it cook thoroughly until the potatoes are soft.
  8. Serve with hot rice, traditional Malay salad (ulam) and shrimp anchovies paste (sambal belacan).
